White, Colored and Chocolate Foamy Meringues. The meringue, very light and crumbly, is used in various sweet preparations. The best known are meringue, white spumini or covered with melted chocolate, mushrooms, lady's fingers. Ordinary meringues are often cooked in the form of a tuft. They are then paired, back to back, with whipped cream or chocolate and cutlery in paper cups. Although it is usually white, the meringue can be variously colored to create color contrasts with other ingredients of the cake. It can also be flavored, for example with the addition of cocoa, vanilla, lemon drops.
